The map of protected flavor

Italy leads with 920 registered products, followed by France (799) and Spain (408). A designation of origin (PDO) or geographical indication (PGI) is a legal seal tying a product to a place: only cheese made in the right region, with the right method, may be called Parmigiano Reggiano. Southern Europe dominates the ranking because that is where the idea was born, linked to wine and then to cheese, ham and olive oil.

The single largest category in the register is wine, followed at a distance by cheeses, fruit and products of animal origin. To explore by theme, see the designations of origin of Europe and, in detail, cheeses with a designation of origin. Brazil runs its own system, with products such as Cerrado Mineiro coffee and Paraty cachaca; the national list is in the geographical indications of Brazil. The table above separates PDO (where everything, from raw material to preparation, happens in the region) from PGI (where a single step tied to the place is enough).
